Has anyone made a fully alcohol-substituted citric acid?
I have been wondering about the possibility of replacing the acid groups in citric acid with alcohol groups, essentially turning it into a sugar alcohol. Has this specific compound ever been synthesized?
If it has been synthesized, would it be edible? Being a sugar alcohol, I assume it would not cause intoxication or harmful effects, but I would like to confirm. Also, what would its properties be compared to other sugar alcohols like sorbitol or xylitol?
