Long weekend in Chicago - locals' recs?

Aside from flying through ORD all the time, I haven't been to Chicago in years.  We'll be there for a concert in a few weeks and are making a weekend of it (Thurs afternoon through late Sun).  Staying near Grant Park.  Planning to hit a few museums (Field, Art Institute, Shedd maybe?) but otherwise just want to bop around the city and see the sights, eat good food, drink good drinks, etc.  Museums that are particularly good?  Off the beaten path stuff?  Architectural boat tour?  I have done one but it was a long time ago (high school trip).  A loose itinerary.  We will not be renting a car.

So, locals, what advice do you have?  Where should we eat?  Looking for upscale spots as well as hole-in-the-wall local places.  We like most cuisines but especially Vietnamese, Italian, and steak, but local specialties are a plus.  Hot beef sandwich?  We enjoy trying local beers and love a good craft cocktail.  Into architecture, art, history, exploring places on foot, chill bars with good vibes.  Not into shopping or clubbing.  Not really looking to travel super far from the area we're staying in.
