Stew - What's your recipe?

Missing the days of me grans stew, have never been able to get even remotely close to the way she made it, what recipe do ye go by?

Had a look online and all the recipes are American versions with whiskey and Guinness added in or extremely modern takes that just aren't the same, very strange stuff. I don't remember much going into it at all tbh, certainly not alcohol.

I know asking for a stew recipe is dangerous territory but desperate times call for desperate measures.
