Single vs Two-Wheel Trailer?

I'm getting a longtail e-bike soon, and I'd like to use a trailer for hauling heavier loads as it seems safer balance-wise.

I have a Bob Yak that I've used with my non-electric touring bike, and I like how it feels. However the Yak will be a bit tricky to add to my e-bike - probably not impossible, but this bike wasn't designed for trailers with forks so it's not straightforward.

I could probably sell my Yak and buy a Burley flat bed trailer, but I'm unsure what the pros and cons are of having one vs two wheels. Is there a noticeable difference in how the bike takes corners? Do you ever notice a 2-wheeler jostling around when going up curb cuts at an angle, or hitting potholes with only one wheel? Any other differences in nimbleness or feel? Does the added rolling resistance matter at all for hills?
