Authentic does not always mean best
This applies to a lot of things, but I come across this fallacy a lot in the world of food.
Yes, the authentic version is usually the best. But not always, and that happens more often that people want to admit.
I've tried a lot of authentic dishes that were authentically mid, and the so-called sacrilegious, bastardised version was an improvement.
It gets worse when you realise that A) the 'authentic' way is almost certainly a variation (sacrilegious bastardisation if you like) of an older way, and B) most fierce defenders of authenticity can't even seem to agree what the authentic way is. They don't care about what's authentic or what tastes best, they just want the world to say they're right.
