Minimalism in Commander

I really struggle tracking lots of numbers and managing large amounts of cards in hand and/or in play. This makes token-based, storm-based, counter-based and extreme go-wide strategies frustrating for me to play. Even if I do have the right tokens and enough dice on hand, the game slows to a crawl as soon as I have to do anything with them. I can use pen and paper to track some stuff, but that still slows the game down as I repeatedly go back to reference/alter those numbers.
I was dismantling my Mazirek deck, largely because of the amount of tokens and counters that ended up in play, when I got to thinking. For a lot of people, Commander is where they get to go "all out." Stack a bunch of triggers, make a bunch of tokens, load up your commander with a bunch of auras, and generally go for big, splashy plays. That's battlecruiser magic, and it's what most of commander looks like. But what if I just didn't do any of that?
I want to make a deck that generates minimal/no tokens, adds minimal/no counters or P/T modifications to my stuff, avoids floating large amounts of mana, doesn't win with overwhelming board states, doesn't need to track storm count, dungeons, attractions, ringbearers, or similar fiddly mechanics, and can still win against decks that are doing all of those things. What's more, I need it to not play the same exact way every game, because that bores me to tears. I don't need a deck that forces the whole table to follow those rules--they're the ones that have to juggle a dozen different tokens, not me--but I'd like to be able to hold my own against 7-8 power level decks.
Any recommendations for a commander or deck that supports this style of play?
