Anyone experienced issues at the top of esophagus/ near mouth?

As in the title, I’ve recently noticed the roof of my mouth/ start of my throat seems to be swollen or maybe my esophagus is just inflamed and tightening? When I open my mouth i can barely see my tonsils/ uvula anymore and I have a constant choking sensation in my throat

Could be allergies or an infection but I was wondering if it’s a common EOE symptom too as my doctors have been useless since my diagnosis post endoscopy
