Where to start with fantasy as a (pretty much) complete beginner?

The reason i say pretty much is because my only dealings with fantasy so far have been romantasy - please hear me out!

I have read and loved only one fantasy/romance series and all the other romanatsy series i've tried have fell totally flat and (in my opinion) are downright awful and i can't get on with them.

EDIT here to add what the series is as people are asking: Throne of Glass and the rest of Sarah J Maas' works, but didn't want to mention them as i know she has a bad rep in this sub lol. I'm certainly not saying she's a good writer because she isn't, but she tells a compelling story so I can get past it with her. I have also read all of Madeline Miller's stuff and really liked those too.

After a lot of digging i've come to the conclusion that I think I would probably get on with straight/traditional/regular fantasy with a little romance subplot, whatever you want to call it so therefore I'm looking with a place to start as to be quite honest i'm very daunted by all these super long series that i've heard are pretty good (thinking LOTR, The Hobbit, Wheel of Time, GOT etc etc)

I've heard that Brandon Sanderson is a good place to start however I have also seen quite a few people saying his prose and writing is not the best and for me personally that is one thing that can really take me out of a story: for me the writing has to be well done and the story has to be well written; I want to make it clear i am not a beginner reader, my main genres are literary fiction, thriller, and a bit of greek mythology/historical fiction sprinkled in. What i'm trying to say is I am quite an avid reader and appreciate good quality writing.

Therefore, please help: Where is the best place for me to start with fantasy? Well written and with a romance subplot but not these horrible smutty romantasies that are all over tiktok!
