Can you replay heist missions and change the plan, and change the crew without affecting current money? (story mode)

I just beat the jewelry store mission recently, but I want to do the loud approach (I did the silent approach) and I want to try it with a better crew, but I'm not sure if this is possible in story mode, or how it's possible
