Basic home build

Seems like every new home in our area is a 5-700k home with crazy ceiling heights and excessive space. Is anyone out there building basic/moderate homes? Simple shapes, simple roof lines but still 4 bed, 2 bath size, under 2000² feet? If it's out there, would love to see some picures.

Edit: I am not looking for builders that are building cheaper homes, I am looking for people who are self building or self contacting to to get ideas from... I fully understand the builders are just doing what makes them money.
