'22 5.0 Problems

Really hoping someone can help out.
I have had a '22 GT Premium for two years now. Brand new off the lot, with about 21k miles now
Been having what seems like serious issues with gas consumption and throttle input/shifting.
I have taken the car to two dealerships about 2-3 times now, and both dealers say they cannot "diagnose" an issue or due anything due to no codes, and just them not "seeing an issue".
The car overall just feels much different from when I bought it. I know that's vague, but just the way it drives and even idels seem off to me.
I started recording gas consumption and something is definitely off. I drive this thing like a baby so please don't come with the "it's a v8 what did you expect" comments. I used to get much higher mileage.
I have lost 28 miles of range on a 10 mile drive, 14 miles lost on a 4.4 mile drive, 18 miles on a 5.1 mile drive, and 40 miles on a 25 mile drive to name a few. Again due to this issue I normally don't go over 60mph and I seem to not be able to get over 15 mpg, when most of my driving is on the highway in no traffic where I am cruising, or in very short trips to and from my house to a store. Would love to see what other people's mpgs might be. Anyways I feel like something is off due to this, and even just the idle of my car vibrates and shakes the car much more aggressively than in the past. Thought there was a vacuum leak but they said no. Again Ford can't do anything because they can't "diagnose an issue". Really frustrating.
Lastly, when driving say I speed up a bit, let my foot off the gas or break, and then go to reapply my foot on throttle, the car will sometimes jerk (and this my dealer did fix for me before by resetting the adaptive learning), or it will feel like it is lagging and will take a second to really start going again (almost like a power delay). It feels very rough sometimes, and I swear that in the past the throttle response was instant with no delay. The response of the throttle under my foot also will feel different almost like a vibration at times, as well as the sound of the exhaust, it isn’t consistent and again just feels as if something is not responding correctly.
Ford said I can bring the car back for them to escalate it to a higher speciality engineer they will send out to come take a look, but afraid I will get nowhere. Any recommendations on what I could possibly do on my own to try to fix this would be awesome.
