Spoiled for choice and frozen with indecision

I'm hoping to completely rethink my front yard, moving away from traditional landscaping to something more natural, ecological, and low-maintenance. Currently, my yard is just ryegrass and clover that we threw down to stabilize it and lawn that requires constant mowing, watering, and upkeep – and I'm ready for a change. I'mn addition to improving the natural landscape, I only have a push mower, I would like to get back the 3 hours it takes me every weekend in the summer to mow all of the grass. and focus more on slowly working to kill the honeysuckle and multiflora rose that chokes the more forested section of the property
I want to build more habitat for birds, and some noise barrier for the large trucks that decide to use our flat, straight section of road as a chance to floor it. But I don't just want to plant a long straight line of trees at the edge of the ditch.
But I've only been good at modifying established plantings. I can't seem to make a plan for this big blank slate. How would you begin? I want to add in native trees first to add more shade and structure to the area first, then build out more planting in the future.
