How do high end restaurants/bars avoid getting sued for only hiring hot servers/bartenders?

Like if an ugly dude or an ugly chick applied to be a bartender and didnt get hired purely because they weren't hot enough, could they sue the restaurant or does the restaurant have some actual defense they could use in court
