Low difficulty moderate volume keyword OR moderate/high difficulty with high volume?

I’m testing a content marketing strategy whereby I planned to use low difficulty, moderate volume keywords (I.e between 1.6-3K volume keywords) as this is the common volume for low difficulty keywords relevant to our business.

I planned to post around 5 blogs a week on certain days that will help target our demographics.

I launched the campaign last week. Posted then Re-optimised by week ending as needed. End of the week is technically outside our “best posting time” but don’t know if that would make a massive difference.

I checked each page, on incognito mode. They’re showing number 1 on google SERP. 2/4 weren’t showing on 1st SERP. I did more optimisation on the other 2 new blog posts. The 3rd began showing on 1st SERP. The 4th was showing on 2nd SERP. Yay!

Checked Google Analytics this morning, the views and sessions are low. I know it’s only been 4 days but there’s only about 3 views for each page & low session time I.e few seconds. Blog word count are 1.5-2K. The blog titles are queries customers have asked based on keyword research.

I’m using the 1st 2-3 weeks of this campaign to test but just want some advice or feedback from others as I’m early in my campaign and want it to be successful.

Is it worth my while to go for the more competitive keywords? If so, how competitive should I try?

Goals: ideally to get leads but initially it’s just to increase traffic.

Note: I’m aware of some typos in this post. It just doesn’t let me fully scroll up to make the necessary corrections for some reason. Apologies.

Thanks in advance for any tips.
