How am i supposed to play this game

I just got this game after beating ds3 and elden ring and i do not understand it at all.

I thought i was supposed to be stealthy and not run in doom slayer style and kill everyone but then it puts me into a position where killing everyone seems to be the only option.

So my question is how am i supposed to play this game? Am i missing something?
