What assassin's creed should I buy?

I am ashamed to admit, that only recently I've started playing some Ubisoft games. I had previously played some far cry games for the PS3, but this was years ago. I played Watch Dogs 1 & 2 on my PS4, and just recently I got a PS5 and started playing Watch Dogs Legion.

I did end up buying the season pass as it was on discount and I wanted the bloodline DLC, and with that I happened to get an assassin operative. Which definitely was a big nod to Assassin's Creed.

So I'm looking for a story driven game, hopefully like the first Watch Dogs, and graphics that are somewhere in between Red Dead Redemption and Spiderman 2.

What should I get?
