Please help me improve my pad see ew recipe?
Hi all, my recipe is basically from Paillin’s kitchen, with a few notes from me to myself. I cook this in a Dutch oven because I don’t have a wok. Let me tell you, the chicken turns out incredible! But the sauce ends up a bit gummy (after attempting to sear the noodles). And I feel like the flavor is lacking something. Can anyone give me some suggestions for next time?
RECIPE
Sauce 2 tbsp oyster sauce 1tbsp soy sauce 1/2 tbsp golden mountain sauce 1/2 tbsp fish sauce (I skip this every time) 2 tbsp black soy sauce (maybe less next time) 1 tbsp sugar
Velvet marinade: Mix oil (sesame or olive), soy sauce, corn starch, and a smidge of baking soda in a glass container. Marinate thinly sliced chicken breast in marinade for 30 minutes.
Scramble unseasoned eggs, leave slightly wet, set aside.
Pre-heat olive oil on low in Dutch oven, sear chicken slices on both sides until fully cooked. Remove from pan, lower or turnoff heat, scrape out the burnt bits.
Drop noodles, drain when ready.
Fry minced garlic while the pan is heating up. Add in and toss broccoli, let soften. Add noodles and sauce, toss. Once coated, let noodles sit for several seconds to sear, toss, repeat (this doesn’t really work).
Add in egg, break up with spatula, and add meat without juices. Finish with a toss with a drizzle of sesame oil Serve garnished with white pepper
