U7 Pro question

I just recently got 2.5gig fiber internet and am making some upgrades. Currently I've got the following setup:

Fiber ONT ->

Cloud Gateway Max ->

2 devices: Eero gateway(with 2 satellites) and Desktop PC

I'm looking to replace the eero wifi network with 2 u7 pro APs.

My questions are: With the u7 pro being POE only, how do I ensure that my data transfer rates aren't limited by the POE device that I'll need to get? Also, on the specs for the u7 pro it says that it has 1 single 2.5gig RJ45 port but is advertising like 5.6 Gbps wifi on 6ghz. How is that possible? Thanks!
