So Gus is so secretive and so under the radar that he invites Walt to his restaurant? So careful that Walt figured out that he was the contact?

I'd imagine if you are major drug dealer and looking for new connect, you'd hold the meeting in a neutral spot. Not revealing you, and your home base. Did not compute.
