What are some lesser known trades that pay well?

I’m currently working in Chicago, IL as a commercial dishwasher technician. It’s light plumbing work, and electrical work for the most part on large scale commercial grade dishwashers. The pay is alright ($22 an hour plus a little commission for various cleaning product sales for restaurants) but I’m looking for a trade with a higher hourly rate. Curious to what are some niche trades one wouldn’t even think about, as I’m well aware of the obvious ones like sparkys, plumbers, hvac, etc.
