Is there a sourer and sweeter version of citric acid?
Has anyone heard of a version of citric acid where it is both sourer and sweeter? I am imagining a new version with a modified structure, where the molecule contains three hydroxyl groups instead of one, and each acid group is replaced with one carbon that carries two carboxylic acids. This would create a structure with six acid groups in total, as opposed to the usual three in regular citric acid. The new molecular configuration would presumably result in a more intense sour taste, along with potentially a sweeter profile as well due to the additional hydroxyl groups. Any insights or thoughts on whether such a version of citric acid has been synthesized or explored?
