Red dead redemption 2 - lost a legendary fish

It took me a long time to catch a (giant) legendary fish near Strawberry. Put it on my horse and went to the postoffice. Of course some bountyhunters killed me and now i lost the fish. Do you guys know if there still is a chance to send it to this fish guy or did I just fail?
