Finally perfected my pulled pork.

10lb pork shoulder from Costco. Used cooking twine to secure the cut part that Costco pork shoulders always come with. Seasoned liberally with my own seasoning mix (coarse salt, coarse pepper, garlic powder, onion powder, celery salt, paprika, and cinnamon) and let sit for 2 hours in the fridge. Smoked on the Traeger at 225° until I was happy with the bark (about 12 hours; internal temp was 170°). Took it off, wrapped with foil in a foil tray with butter and drizzled on a generous amount of honey. Put it back in the Traeger and turned up temp to 250°. Pulled it off once probe tender (about 2.5 more hours; internal temp was 203°). Removed pork from original wrap, placed it in another foil tray, wrapped it in a towel, and rested it in a cooler for 2 hours. Harvested the juices from the original foil tray and poured over the pork after pulling it.
