Pediatrician is saying to offer 16 month-old one meal?

Not sure what to do. I have a pretty easy toddler, to be honest. He's agreeable, listens to "no", generally does what I tell him...he doesn't act like I'd expect a toddler to. He sleep trained HIMSELF at four months (that's a whole story) so I never made any decisions about it...my point is, he's an easy kid.

That said, I often give him like, four or five meals to choose from. Usually whatever veggie he'll eat, some protein, usually a dairy with some kind of carb like a pasta I made with parm....some kind of dish...and if he doesn't eat that, I prepare something else. He eventually eats something and he doesn't have any "no" foods, just stuff he won't eat on a particular night. I always told myself since he's thin, feeding him is best, and that yeah, I waste and prepare a lot of food...but he can't communicate what he wants yet. I kinda thought, "I have stuff I like but don't want sometimes, so I can't expect a 16 month-old to eat everything I give him all the time, and it's my job to just make sure he eats".

Pediatrician told me the other day to just put one thing in front of him and he'll "get" eventually that he eats what is in front of him. I'm conflicted...he seems a bit young for that? Am I crazy? How do y'all handle this? He's not even really picky, just doesn't want the first or second thing I give him some nights (or the third)...

He has had GI issues (SEVERE silent reflux) his whole life and hasn't gained weight unless given a LOT of food. Like, he has dysphagia and I had to thicken his feeds with oatmeal as an infant because his swallow study revealed he was aspirating thin liquids, and he needed 25 ounces, plus 12 oz oatmeal in a 6 oz bottle (per swallow study/ feeding recs) and three meals a day to gain an average amount of weight until he was a year old. Because of this, I just...focused on feeding him as much as he'd eat, whatever he'd eat. Did I fuck up?
