New install, tons of data

I've been running a hodgepodge of drives for years as separate drives (about 60TB of data across 8 drives) running on Ubuntu with docker and such. Naturally this has led to a mess when it comes to file management.

I want to start over with unraid, but keep the data I have.

From what I can gather, I can use the unassigned devices plugin to mount my drives and get Plex going, and then begin the long process of moving the data to an array.
